Moor Kuzhambu Mix (50gm)

Ingredients

Coriander, Cumin, Bengal Gram (Chana Dal), Toor Dal, Raw Rice, Dry Red Chilli, Black Pepper, Fenugreek, Turmeric, Curry Leaves, Asafoetida, Salt, and Refined Groundnut Oil.

How to Prepare (Serves 2–3)

1. Whisk 250 ml of sour curd with 150 ml of water to prepare buttermilk.
2. Mix 20 g of Moor Kuzhambu Mix with a little water to make a smooth paste and add it to the buttermilk.
3. Add 150 g of cooked vegetables such as ash gourd, white pumpkin, okra, brinjal, or cucumber.
4. Cook over a low flame, stirring continuously until the curry is just hot. Do not allow it to boil vigorously, as the curd may curdle.
5. In a separate pan, heat 2 teaspoons of coconut oil. Splutter ½ teaspoon of mustard seeds, then add 1 dried red chilli and a few curry leaves.
6. Pour the tempering over the Moor Kuzhambu, garnish with fresh coriander leaves, and serve hot with steamed rice.

செய்முறை (2–3 பேருக்கு)

1. 250 மில்லி புளித்த தயிருடன் 150 மில்லி தண்ணீர் சேர்த்து நன்கு கடைந்து மோர் தயாரிக்கவும்.
2. 20 கிராம் மோர் குழம்பு மிக்ஸை சிறிதளவு தண்ணீரில் கரைத்து மோருடன் சேர்த்து நன்கு கலக்கவும்.
3. 150 கிராம் வேக வைத்த காய்கறிகளை (வெள்ளைப் பூசணி, வெண்டைக்காய், கத்தரிக்காய், வெள்ளரிக்காய் போன்றவை) சேர்க்கவும்.
4. மிதமான தீயில் தொடர்ந்து கிளறியபடி சூடாகும் வரை சமைக்கவும். மோர் கொதிக்க விட வேண்டாம்.
5. மற்றொரு வாணலியில் 2 தேக்கரண்டி தேங்காய் எண்ணெய் ஊற்றி ½ தேக்கரண்டி கடுகு, 1 காய்ந்த மிளகாய், மற்றும் கறிவேப்பிலை தாளிக்கவும்.
6. இந்த தாளிப்பை மோர் குழம்பில் சேர்த்து, மல்லித்தழை தூவி சூடான சாதத்துடன் பரிமாறவும்.
